I made the best bread ever today. It really took me to spiritual heaven. I never buy the breads in the supermarkets, even organic wholemeal, because if you look at the ingridients, they almost always have preservatives, often loads. Up until now, I have always just not ate much bread.

But this is my recipe for bread;

1) Almond and Raisin Bread

1kg organic wholemeal spelt flour
Packet of yeast culture (follow directions on pack for how much)
700ml warm water (adjust as necessary when mixing with flour)
2 tablespoons organic honey (necessary to active the yeast cultures)
2 tablespoons organic extra virgin olive oil
1 small cupful organic almonds
1 small cupful organic raisins
2 tablespoons organic cinnamon powder

Method;

Put the almonds and raisins in water to soak, as this stops them from drying the bread.

First, pour flour and yeast into a large mixing bowl, and fill jug with 700ml warm water. Stir 2 tablespoons of honey into the water, until it completely dissolves. Honey is necessary to feed to yeast, so cannot be omitted. Gradually add the water and mix in. Add the olive oil, and then continue to add the water very gradually. It might be more or less than 700ml, but adjust as necessary.

Once into a stody ball, not to dry, not too wet, kneed for as long as possible (5-10 mins I do). Longer the better because it aerates the bread. Don't add the extras yet. Leave in a warm place to rise for 30 minutes. (37celcius is ideal, so depending on climate you might need to put in on a radiator).

Once risen, take the risen ball, and sprinkle in the almonds, raisins and cinnamon powder. Kneed for a further 5-10 minutes to thoroughly mix the extra stuff into the bread.

Leave ball to rise for a further 30 minutes, after which, grease a loaf tin with extra virgin olive oil, and mold it into the tin. 1kg flour should make 2 loaves. Bake in a preheated oven for 30 minutes, at Gas mark 6. Obviously, check before to see how it is doing and whether it needs less/more.

Take out and let cool, and indulge in sublime!

2) Cocoa and banana bread

This one is the one that transported me to paradise. Absolutely sublime. When I talk cocoa I talk Ital, pure cocoa beans. Not chocolate.

Exactly the same as before, just the extras are 2 organic sliced bananas and a cupful of organic cocoa nibs (these are smashed cocoa beans).

You should soak the cocoa nibs first.

Yo Joe,

I have stopped eating bread basically all together[except for unleavened bread].. The yeast culture feeding on the flour is a process of fermentation. I have read in a thread titled 'Apple cider Vinegar' where the I said: "I would avoid it because fermentation is a part of the processing, and (as for me), I wouldn't put anything pickled inside my body."

Just wondering here: Is the I making an exception for fermentation within bread?

I am not passing judgement or bringing fire, I ask because cutting out bread has been one of the more difficult dietary restrictions I apply.. If the fermentation within the rising bread is very slight and most still cite homemade organic bread as being Ital, then maybe I will rethink cutting it out.

Wow. Your post definitely made me think. And I actually think your right. The process most definitely is fermentation. So, I would say, perhaps in it's most strict sense it is not Ital.

Having said that, the amount of yeast that is used is literally a single pinch per 1kg of bread. But, nevertheless the yeast is present.

(As for me), I think I will eat the bread that I have made, because the amount of yeast I would be eating if I ate the whole kilogram would be 1 pinch. But I won't bake anymore, and I think I would stick to whole grains in their natural form.

I don't plan to bake on a regular basis.

But no, you are quite right that in it's strictest sense, I don't consider it Ital, and therefore don't plan to make the bread again (but will eat what I have made)

oh. i don't eat bread too. people, what do you eat to get your omega 3? i'm curious if you all are really avoiding oil...

we eat groundnuts, pumpkin seeds, sunflower seeds, ganja seeds & other seeds. We get omega 3 fatty acids from dem. We don't use yeast, baking powder & salt but we do bake ital bread. Blessed Love

^Bread without yeast? Do you bake just flatbread? Or do you bake loaves? They must be pretty rock hard. I once tried it without yeast years ago and I couldn't cut it (A rye loaf); we had to use a garden saw in the end.

Brother. bread not loaf. De word loaf doesn't even exist in I mama language. Ina ancient Africa I & I neva worry about no loaf fo I & I baking is Ital. No yeast, no salt, no artificial chemicals, no animal products, no blood, no flesh. Bless up brother Joe. Big up fo promoting Ital livity. If I was in yo land I woud invite u in I place.
