I man recently purchased a book called Raw and it had some wonderful alternatives to dairy cheese, milks and some other items. I wanted to post these for you so that you could try them yourself.
Cashew Cheese-
3 cups of raw cashews, soaked for 10-12 hours in filtered water and drained
1/4 cup Rejuvelac-This is a fermented liquid that is drained from sprouted grains, you can find at health food stores.
1/2 tsp celtic sea salt
In a high speed blender process cashews until smooth. transfer to a bowl and stir the rejuvelac and salt. Line cheese cloth over strainer of double thickness and place over a bowl to catch draining liquid. Leave to ripen in a warm place for 12 hours.
Remove from the cloth and shape the mixture, and refridgerate for 24 hours or until firm. Good for about three days.
Yeild Three cups
Nut milk-
Almonds, cahsews ..... blended with water and strained is nut milk. 3cups of nuts to 6 cups water
Pine Nut Mayo-
1/2 cup raw pine nuts soaked for 6 hours and drained
1/4 cup filtered water
2tbsp olive oil
1.5 tbsp lemon juice
sea salt
Blend ingredients together and season to liking. last for about 5 days.
Alternative sour cream-
3/4 cup young thai coconut meat
1/3 cup of raw cashewssoaked for 10-12 hours
3 tbsp olive oil
2 tbsp lemon juice
1 teaspoon of date paste (dates made in to a paste when blended with water)
1/2 teaspoon sea salt
about 1/2 cup of filtered water
In high speed blender mix all ingredients except water, which you use to thin cream as desired.
Raw Vegan Ceaser Dressing
1 cup olive oil
3cloves garlic
2medium celery stalks
1/2 cup filtered water
1/4 cup nama shoyu (soy sauce)
2 tbsp white miso
4 tbsp of date paste (dates pureed with a little water to form paste)
1 teaspoon kelp granuels
black pepper
